For a shorter week, the freezer was the great friend
of lunchboxes, with the exception of soups and the 2 doses of sautéed
vegetables/grilled that accompanied the lunchboxes.
Segunda-feira/Monday:
Almoço: Sopa de espinafres. 2 fatias de tortilha com legumes
salteados, ou melhor, grelhados com recurso ao micro-ondas. Pera assada com
moscatel.
Lanches: 1 ameixa, uvas, 2 fatias de “challah” com ameixa. 1 Iogurte
grego. Chá de cavalinha.
Num outro recipiente junte ½ curgete, com casca, cortada em cubos e 6 tomates cereja em metades. Acrescente a batata e o chuchu. Regue com mais um fio de azeite, junte uma pitada de flor de sal, ½ colher de café piripiri moído e 1 colher de café de alho em pó. Misture muito bem e espalhe sobre o tabuleiro do micro-ondas. Programe a função grill no máximo por cerca de 20 minutos (vá vigiando).
Lunch:
Spinach soup. 2 slices of “tortilla” with sauté vegetables mixture. Better said:
grilled in the microwave.
Snacks:
1 plum, grapes, 2 slices of plum “Challah”. 1 greek yoghurt. Horsetail tea.
Vegetables (serves 2 1/2 luncboxes):
Peel and cut one medium sweet potato and ¼ chayote
into small pieces. Place in a suitable container for microwave, season with a
little olive oil and salt and cover with cling film. Stick the film and
microwave for 4 minutes at full power. Let stand for 1 minute and carefully
remove the cling film. With the tip of a sharp knife make sure the potatoes are cooked.
In another bowl combine ½ zucchini, unpeeled, cut into cubes and 6 cherry tomatoes cuted into halves. Add the potatoes and chayote. Drizzle over a little olive oil, add a pinch of sea salt, ½ teaspoon ground chilli and 1 teaspoon garlic powder. Mix well and spread on the tray of the microwave. Set the grill function for a maximum of 20 minutes (go watching).
Terça-feira / Tuesday
Almoço: Sopa de espinafres. Empadão de carne e legumes grelhados.
Pêra assada em Moscatel.
Lanches: 1 maçã, 1 tangerina, 2 fatias de "challah" com ameixa. 1
iogurte grego. Chá de cavalinha.
Lunch:
Spinach soup. Smashed potato with meat and grilled vegetables. Roasted pear in
Moscatel wine.
Snacks:
1 apple, 1 tangerine, 2 slices of challah with plum. 1 greek yoghurt. Horsetail
tea.

Almoço: Creme de legumes. Penne com legumes, ovo e queijo
ralado. Pêra assada em Moscatel.
Lanches: 1 maçã, uvas, 2 fatias de “challah”. 1
iogurte grego. Chá de cavalinha.
Lunch:
Vegetables creamy soup. Pasta with grilled vegetables (the ones from Monday,
plus some tomatos, boiled egg and parmesan cheese. Roasted pear in Moscatel
wine.
Snacks:
1 apple, grapes, 2 slices of “challah”. 1 greek yogurt. Horsetail
tea.
