Marmitas e chips / Lunchboxes and chips


Antes de mais nada, não se esqueçam do giveway a correr no blogue

E, depois, com o ano quase a acabar e tantas publicações em espera vou manter-me fiel ao que me tem trazido aqui ultimamente: as marmitas. Não que lá em casa não se faça nada para além das marmitas. Não, mas mesmo entre refeições deliciosas, preparadas pelo D. ou por mim, acaba sempre por faltar a fotografia. Bom, mas como para o blogue o ano foi o ano da marmita, é com elas que vamos acabar 2013.

The year is almost ending and I have so many posts wating to come out, that I will choose to stick faithfull to the reasons wich makes me pass by here lately: the lucnboxes. It`s not that at home we don´t cook anythinhg else beyond lucnboxes. No, it´s not anything like that at all.The point is that, even between delicious meals, made by D. or myself, it allways ends up missing the photo. Well, but as for the blog the year was "the lunchbox year", it´s with the luncboxes we will end up 2013.

Este fim-de-semana, depois de alguma letargia culinária, agarrei-me, quase literalmente, ao forno e à Bimby. Do supermercado trouxe algumas patisnacas que não podia deixar de experimentar, por isso aproveitei o forno ligado para grelhar um robalo e assei um tabuleiro de legumes e meia duzia de beterrabas. As beterrabas foram peladas e congeladas e hão-de dar mote a uma publicação só para elas. Quanto aos legumes, fiz assim:

This weekend, after some culinary indolence, I wrap me up, almost literally, to the oven and to Bimby. From the supermarket I took some parnsley that I just had to try, so, as long the oven was turned on to grill a sea bass, and I roasted a vagetables tray anf half a duzen beets. Thes ones, the beets, were peeled and frozen and will have their own post. The vagetables I did this way:



Ingredientes:
1 nabo
1 cenoura
1 pastinaca
1 batata doce
1/2 cebola
2 dentes de alho
1 pitada de flor de sal
1 fio de azeite
algumas hastes de tomilho

Preparação:
Descasque os legumes e corte-os em rodelas finas. Se quiser servir os legumes como acompanhamento de imediato corte-os o mais fino possível, para que fiquem estaladiços, senão é preferível que os corte um pouco mais grossos para ficarem macios, já que com o tempo perdem a crocância (mas não o sabor, garanto).
Espalhe os legumes num tabuleiro, de preferencia numa só camada, mas se não puder ser coloque-os o menos amontoados possível, tempere com o sal, coloque os alhos esmagados, espalhe as hastes de tomilho e regue com o azeite.
Leve ao forno pré-aquecido a 180º.
Vigie. Se tiver feito uma só camada, volte-os assim que tostarem, senão envolva 2 ou 3 vezes com a colher de pau até estarem assados. 

Como servir: são irresistíveis a sair do forno, mas na marmita vieram com um ovo escalfado e rúcula. 
E para a sobremesa: a nova gelatina de tangerina da Branca de Neve que fiz apenas com 300ml de água e 1 iogurte natural. Uma nuvem de frescura para acabar a refeição.



Ingredients:
1 turnip
1 carrot
1 parnsley
1 sweet potato
1/2 onion
2 garlic gloves
1  pinch of salt
Olive oil to taste
Some thyme

Preparation:
Peel the vegetables and cut them into thin slices. If you want to serve the vegetables immediately as an accompaniment cut them as thin as possible, so they get crispy, but if not it is preferable the slightly thicker cut to stay soft, since over time they will lose their crispness (but not the taste, I guarantee).
Spread the vegetables on a tray, preferably in a single layer, but if you can not place them as little as possible crammed. Season with salt, crushed garlic, spread the thyme and drizzle with olive oil.
Bake in preheated oven at 180 º.
Watch it. If you make a single layer, turn them as soon they get golden, if not involves it  2 or 3 times with a wooden spoon until they are baked.


How to serve: are irresistible to come out of the oven, but the pot came with a poached egg and aragula.
And for dessert: the new gelatin Tangerine from "Branca de Neve" that I make just with 300ml water and 1 natural yogurt. A cloud of freshness to end the meal.

Marmita pós-festas / After party lunchbox



Ano passado as minhas marmitas pós Natal continuaram a celebrar a época: cabrito, pinhões e farrapo velho foram alguns dos seus ingredientes. Este ano, que nem comi tanto como no ano anterior, que fui mais comedida na escolha das doçarias e até pequei por defeito na quantidade de açúcar usada nas rabanadas e aletria, só queria mesmo era desintoxicar, por isso esqueci o bacalhau, o cabrito, as rabanadas, o bolo-rei e tudo o mais que adoçou a nossa mesa e escolhi uma marmita bem simples.

Last year, my after Christmas lunchbox meals were still a celebration: lamb, pinions and the traditional "farrapo velho", made with the leftovers from Christmas night codfish, were some of the ingredients. This year, as I haven`t ate much as the year before, as I made a smaller selection for the traditional sweets and even cut off the sugar in the french toasts and in "aletria" (sweet angel air pastta"), only I really wanted was to desintoxicate myself, so I forgott the codfish, the lamb, the french toasts, the king-cake and whatever else has sweetened our table, and choose a quite simple meal.



Da mesa de Natal só os grelos salteados que são a minha perdição, singelamente acompanhados de cenoura, abacaxi grelhado e umas nozes. Parece que é pouco, eu sei, mas foi hoje apenas o bastante e a marmita desejada: sabia que o abacaxi contém uma subsistência chamada "bromelina" que facilita a digestão? E que a parte do abacaxi mais importante é precisamente o seu centro, que normalmente deitamos fora.

From the Christmas table only the sautée greens in olive oil and garlic, that are a perdition to me, candidly accompanied by carrots, grilled pineapple and some nuts. It seems litle, I know, but today was just enough and the wished lunchbox: did you know taht the pineapple contains a substance called "bromelain" which facilitates digestion? And the most important part of the pineapple is precisely its center, which normally  we throw away.

"I Love Marmita" e um giveaway

Domingo, 8 de Dezembro, dia das marmitas. Dia do "I Love Marmita" que me fez quase madrugar para me apresentar nos estudos da RTP Porto para a apresentação do livro no programa "Bom Dia". Há sempre um nervoso miudinho que nos parece querer dominar, mas a curiosidade que um estúdio de televisão visto por dentro nos suscita e o profissionalismo de quem nos recebe, ajuda a acalmar o estado de espirito e quando damos conta a entrevista, breve, correu como uma conversa de café.

Day of the "I Love Marmita" that almost made me get up by dawn to present myself in the studies of RTP Porto to talk a little about the book on the dayli morning program "Bom Dia". There's always a niggling nervous that seems to dominate us, but the curiosity about a television studio seen from the inside and the professionalism of those who receive us, help to calm doun the mind state, and when we realize the brief interview ran as a coffee conversation.

Seguiu-se, depois, pela tarde, a sessão de lançamento no "El Corte Inglês" de Vila Nova de Gaia, com a apresentação do Chef Luís Francisco, da Escola  de Gastronomia "Segredos & Cozinha" e a companhia de familiares (com a grande força que o meu D. sempre me dá), amigos e tantas outras pessoas que se identificam com a filosofia da marmita. Sim, porque a marmita é também uma filosofia, um modo de bem-estar no que à alimentação diz respeito.

Then followed, later in the afternoon, a presentation session in "El Corte Inglés" of Vila Nova de Gaia, with the introduction of Chef Luis Francisco, from the School of gastronomy "Segredos & Cozinha" and the company of family (with the great strength that my D. always gives me), friends and many others who identify with the philosophy of the lunchbox.Yes, because the lunchbox is also a philosophy, a way of welfare in regards to food.




Foi um dia emocionante, cansativo e feliz. Já em casa reconfortei-me com uma chávena de chá quente e uma fatia de pão preto irlandês, barrada com doce de morangos inteiros, enquanto folheava novamente o livro.

It was an exciting, exhausting and happy day. Back home comforted me with a hot cup of tea and a slice of black Irish bread with fresh whole strawberries jam, while flipping through the book again.



Agora, há que começar a preparar os presentes de natal e o "I Love Marmita" há-de estar presente em cada pequeno cabaz, tal como alguns doces preparados em tempo de Verão e a versão da Granola que encontram no livro na página 134. 

I must now begin to prepare Christmas gifts and "I Love Marmita" there-to be present in each small bundle, as some jams prepared in Summer time and the version of Granola that you can found in the book on page 134.

Projecto Marmita - Semana 44/2013 / Lunchbox Project - Week 44/2013

O fim-de-semana não foi particularmente devotado à cozinha. Ainda assim, consegui fazer um pão delicioso que acabei por não ter oportunidade de fotografar, mas que acabará por aparecer por aqui, mais dia, menos dia. Aproveitando o forno ligado assei uma abóbora manteiga, aberta a meio e temperada com flor de sal, alho e endro (Espiga) e um fio de azeite. A sopa acabou por render para a semana toda e ainda guardei uma dose no congelador. Também salteei uns legumes que fui distribuindo pelas marmitas e a meio da semana cozi meia chávena de bulgur que utilizei em duas marmitas e congelei o restante. Foi uma semana de refeições leves, maioritariamente sem carne, mas muito saborosas e saciantes.


The week-end was not particularly devoted to the kitchen. Still, I managed to make a delicious bread that I ended up not having the opportunity to photograph, but eventually will come around, sooner, or later. Once the oven was turned on I baked a butternut pumpkin, cutted in halves and seasoned with salt, garlic and dill (Espiga) and a drizzle of olive oil. The soup turned out to serve the whole week and still kept a dose in the freezer. Also sautéed a few vegetables that I distributed trough the lunchboxes and in the midle of the week cooked half cup of bulgur that used in two lunchboxes and froze the rest. It was a week of light meals, mainly without meat, but very tasty and satiating.

Almoço: Sopa de alho francês. Wrap de legumes salteados, rúcula, tomate cereja e queijo fresco.
Lanches: 1 pêra, 1 tangerina, 2 fatias de pão irlandês e 1 iogurte natural. Chá verde.



Lunch: Leek soup. Wrap filled with sautée vegetables, aragula, cherry tomatoes and fresh chesse.
Snacks: 1 pear, 1 tangerine, 2 slices of irish bread and 1 natural yoghurt. Green tea.

Terça-feira / Monday

Sem marmita.
No lunchbox today.

Quarta-feira / Monday
Almoço: Sopa de alho francês. Salada de bulgur com legumes salteados, abóbora manteiga assada e queijo chévre.
Lanches: 1 tangerina, 1 maçã, 2 fatias de pão irlandês e 1 iogurte natural. Chá verde.



Lunch: Leek soup. Bulgur salad with sautéed vegetables, roasted butternut pumpkin  and chévre.
Snacks: 1 tangerine, 1 apple, 2 slices of irish bread and 1 natural yoghurt. Green tea.

Quinta-feira / Thuesday
Almoço: Sopa de alho francês. Bulgur com abóbora manteiga assada e ovo escalfado.
Lanches: 1 tangerina, romã, 2 fatias de pão irlandês e 1 iogurte natural. Chá verde.


Lunch: Leek soup. Bulgur with roasted butternut pumpkin  and poached egg.
Snacks: 1 tangerine, pomegranate, 2 slices of irish bread and 1 natural yoghurt. Green tea.

Sexta-feira / Friday
Almoço: Sopa de alho francês. Quiche de frango com salada de tomate, cenoura e curgete raladas e vinagrete de sésamo.
Lanches: 1 tangerina, manga, 2 fatias de pão irlandês e 1 iogurte natural. Chá verde.



Lunch: Leek soup. Chiken pie with tomatoe and grated carrot and courgette and sesame vinaigrette.
Snacks: 1 tangerine, mango, 2 slices of irish bread and 1 natural yoghurt. Green tea.

Dia 1 na Cozinha com um Strudel de Alheira e Maçã / Day 1 in the kitchen with an "Alheira" and Apple Strudel




E começamos o Dezembro de avental ao peito, mãos na massa e criatividade q.b. O tema escolhido para este Dia 1 na Cozinha foi: "strudels salgados". Fiquei logo entusiasmada. Nunca tinha feito um strudel, nem o famoso de maçã que me faz crescer água na boca sempre que me deparo com ele na blogosfera ou na internet, e já que era estreia absoluta acabei por, literalmente, pôr as mãos na massa: em vez de comprar massa filo, que ficaria deliciosa em qualquer receita de strudel, doce ou salgada, fiz também a massa seguindo a receita que encontrei no blogue "A Cozinha Colectiva". Para o recheio escolhi a combinação alheira e maçã, que é uma combinação que sempre me agradou. O resultado final? Excelente.

Ingredientes:
Massa:
170 gr. de farinha (150 gr. na receita original)
1 ovo
50 gr. de manteiga derretida
3 colheres de sopa de água
1 pitada de sal

Recheio:
1 alheira
1 maçã Fuji
1/2 cebola
1 mão cheia de rúcula
Azeite q.b.

Preparação:
Comece por preparar a massa:
Tradicional (fonte: "A Cozinha Colectiva")
Coloque a farinha numa tigela. Faça uma cratera no centro e acrescente os restantes ingredientes.
Misture com um garfo em movimentos circulares.
Transfira a massa para uma superfície lisa e amasse até obter uma massa elástica. Forme uma bola, cubra e deixe descansar por 15 minutos.
Bimby (fonte: Forum Bimby - receita colocada pela Biras)
Coloque no copo o ovo, a manteiga, a água e o sal e misture 10 seg./vel. 4.
Acrescente a farinha e amasse 3 min./vel. Espiga.
Transfira a massa para um saco de plástico e deixe repousar por quinze minutos.

Passados os 15 minutos, coloque a massa no meio de um pano limpo, polvilhado com um pouco de farinha e comece a pressionar com os dedos para a massa começar a abrir. Com o rolo da massa estenda-a o mais fino possível, dando a forma de retângulo.
Coloque as mãos quase fechadas por baixo da massa e vá esticando, puxando as mãos em direção opostas, até obter uma massa finíssima, mas sem romper (sim, é um pouco complicado, mas nada de transcendente), mantendo a forma de retângulo.

O recheio:
Retire a pele à alheira e desfaça o recheio com um garfo.
Descasque a maçã e corte em cubos.
Aqueça um fio de azeite numa frigideira e refogue a cebola cortada em meias luas, mexendo de vez em quando até começar a amolecer.
Acrescente a maçã e deixe refogar em lume brando/médio. Quando começar a amolecer, junte a alheira desfeita e envolva. Deixe fritar por 2 ou 3 minutos, mexendo com a colher de pau.
Deixe arrefecer por alguns minutos.

O Strudel:
Pré-aqueça o forno a 180º.
Pincele a massa com manteiga derretida e espalhe o recheio, no sentido do comprimento, deixando uma borda livre nas margens.
Espalhe as folhas de rúcula sobre o recheio.
Volte as bordas do sentido da largura sobre o recheio.
Comece a enrolar o strudel com a ajuda do pano, sem apertar muito.
Transfira o strudel para um tabuleiro untado e pincele com mais manteiga.
Leve a assar durante 30 a 40 minutos ou até a massa estar dourada, pincelando mais 3 vezes com manteiga durante a cozedura.
Retire do forno e deixe arrefecer. Tenha cuidado ao retirar do tabuleiro se a massa tiver ficado fininha para que não rompa.
Sirva com uma boa salada.



In English:

So we started December using an apron, hands in the dough and creativity to taste The theme chosen for this "Day 1 in the Kitchen" was: "saltystrudels." I was immediately enthusiastic. Had never made a strudel, not even the famous apple struidel that makes my mouth water whenever I come across with it in the blogosphere or on the internet, and since it was my premiere I ended by literally geting my hands on the dough: instead of buying filo dough, which would be delicious in any recipe for strudel, sweet or salty, I choose to also make the dough following the recipe I found on the blog "A Cozinha Colectiva". For the filling I chose the combination "alheira" and apple, which is a combination that always pleased me. The result? Excellent.
Ingredients:

The dough:
170 gr. all-purpose flour (150 gr. in the original recipe)
1 egg
50 gr. melted butter
3 tablespoons water
1 pinch of salt
The filling:
1 "alheira"
1 Fuji apple
1/2 onion
1 handful of arugula
Olive oil to taste
Preparation:
Start by preparing the dough:
Traditional (source: "A Cozinha Coletiva")
Place the flour in a bowl. Make a crater in the midle and add the remaining ingredientes.
Mix with a fork in circular movements.
Transfer the dough to a flat surface and knead until you get elastic dough. Form a ball, cover and let stand for 15 minutes.
Thermomix (source: Forum Thermomix - récipe placed by Biras)
Put in the cup the egg, butter, water and salt and mix 10 sec. / Level. 4.
Add the flour and knead 3 min./ Level. Cob.
Transfer the dough to a plastic bag and let stand for fifteen minutes.
   
After 15 minutes, put the dough in the middle of a clean cloth, sprinkled with a little flour and start pressing with your fingers to open the mass start. With a rolling pin stretch it as thin as possible, making a rectangle.
Place your hands almost closed down the dough and go stretching, pulling your hands in opposite direction, until a thin crust, but without breaking (yes it is a bit tricky, but nothing transcendent), keeping the rectangle shape. 
The filling:
Remove the skin from the "alheira" and reverse, scraping it with a fork.
Peel the apple and cut into cubes.
Heat some olive oil in a skillet and saute the onion, cuted into half moons, stirring occasionally until beginning to soften.
Add the apple and sauté over low/medium heat. When begin to soften, add the "alheira" mixing with the other ingredients. Fry for 2 or 3 minutes, stirring with a wooden spoon.
Let cool for a few minutes.
The Strudel:
Preheat oven to 180 º.
Brush the dough with melted butter and spread the filling, lengthwise, leaving a free edge on the banks.
Spread the arugula leaves over the filling.
Replace the edges of the width over the filling.
Begin to roll the strudel with the help of the cloth, not tight.
Transfer the strudel into a greased baking tray and brush with more butter.
Bake for 30 to 40 minutes or until pastry is browned, basting with butter plus 3 times during cooking.
Remove from oven and let cool. Be careful when removing from the tray if the dough has been thin so it won`t break.
Serve with a nice salad.
