Salmão para a marmita - Salmon for the lunchbox



Quem acompanha as minhas marmitas já sabe que gosto de poupar em tempo e dinheiro. Um dos meus recursos no tempo mais frio, em que as refeições de forno são mais frequentes, passa por assar um tabuleiro de vegetais para poder usar ao longo da semana.

Anyone who follows my lunchboxes already knows I like to save time and money. One of my resources in colder weather, when meals are more frequente cooked on the oven, is to bake a tray of vegetables in order to use throughout the week.
 
De uma das últimas vezes que liguei o forno para fazer um assado aproveitei para assar três postas de salmão que estavam no congelador - coloquei-as, já descongeladas, num tabuleiro, temperei com sal, cebolinho, hortelã, rodelas de lima e um fio de azeite, juntei alguns tomates cereja. Cobri o tabuleiro com papel de alumínio e coloquei no forno que estava à temperatura de 200º. Tapando o tabuleiro fico mais à vontade para ir fazendo outras coisas, já que o vapor que se cria não deixa o peixe secar ou pegar, pelo que não preciso de o vigiar muitas vezes. Passados cerca de 30 minutos, verifico se já está cozido e se estiver retiro, deixo arrefecer e depois guardo no congelador: pode lascar o peixe e congelar assim ou envolver cada posta inteira em papel aderente. Depois, bem, depois é só gerir o nosso dia-a-dia e aproveitar estas preparações antecipadas para aligeiraram os dias mais ocupados, salvando tempo na preparação da marmita. Estas três postas foram servidas assim:

Simplesmente assado, lascado e acompanhado  com o tomate cereja e esparregado de brócolos. O esparregado foi outra forma de aproveitar um pequeno molho de brócolos cozidos. Preparei-o na Bimby, seguindo a receita do livro base e medindo os ingredientes a olho. Não gosto de esparregado com muita farinha, por isso este ficou na consistência ideal.
 
Simply roasted, chipped and accompanied with the cherry tomatoes and spinach broccoli. The "spinach" was another way to use a small cooked broccoli. I prepared it in the Thermomix, following the recipe of the book basis and measuring ingredients by eye. I do not like spinach with too much flour, so this was the ideal consistency.
 
 

A posta mais pequena foi transformada numa pasta que recheou uma tortilha, mas também podia barrar umas fatias de pão rústico: 1/2 cebola finamente picada juntamente com 1 dente de alho pequeno e umas folhas de hortelã (acho que esta erva é perfeita para temperar o salmão), 1 colher de chá de maionese e uma de sobremesa de queijo creme. Junte tudo numa taça a acrescente o salmão em lascas, sem pele ou espinhas. Com um garfo misture bem os ingredientes, esmagando mais ou menos o salmão conforme o seu gosto.
A tortilha foi recheada com esta pasta e um punhado de folhas de rúcula.
 
The smallest piece of salmon was turned on a fiiling paste of a tortilla, but also could be used on some slices of rustic bread: 1/2 finely chopped onion with 1 clove of garlic and a some mint leaves (I think this is the perfect herb for seasoning salmon), 1 teaspoon of mayonnaise and 1/2 tablespoon of cream cheese. Put it all in a bowl, add the flaked salmon without skin or fishbones. With a fork mix the ingredients well, smashing the salmon, more or less, to your taste.
 The tortilla was filled with this paste and a handful of aragula leaves.
 
 
 
Uma salada é sempre uma refeição perfeita para juntar o salmão. Combinei-o com uma beterraba e um pedaço de curgete cortados em cubos e assados no micro-ondas. É uma forma rápida e limpa de cozinhar os legumes: cortados em cubos e temperados a gosto com um pouco de azeite e ervas e/ou especiarias a gosto, espalhe-os pelo prato do micro-ondas e ligue o grill no máximo durante 15 a 20 minutos. Acrescentei, já a salada estava na marmita, uns gomos de laranja, mais uma combinação ideal quer para o salmão, quer para a beterraba.

 A salad is always a perfect meal for joining the salmon. Combined it with a beet and a piece of courgette diced and baked in the microwave. It is a quick and clean way to cook the vegetables: diced and seasoned to taste with a little olive oil and herbs and/or spices to taste, spread them by microwave dish and turn on the grill on the highest level for about 15 to 20 minutes. Added, since the salad was in the pan, some orange slices, one more optimal combination for salmon, as well to the beet.

Almoço: Sopa de alho francês e pevide. Salada de frango, melão, beterraba e alface com hortelã e orégãos. Crumble de pera, chocolate e gengibre.
Lanches: 1 maçã, 1 tangerina, 2 fatias de "pão da terra", 1 iogurte magro. Chá de cavalinha.

Lunch: Leek and pip soup. Chicken salad with cantaloupe, beets and lettuce with mint and oregano. Pear, chocolate and ginger crumble.
Snacks: 1 apple, 1 tangerine, 2 slices of "bread of the land", 1 low fat yogurt. Horsetail tea.

Terça-feira/Tuesday
Sem marmita.
No luncbox today.

Quarta-feira/Wednesday
 
 
Almoço: Creme de cenoura, laranja e gengibre. Salada de salmão, beterraba, curgete e laranja. Crumble de pera, chocolate e gengibre.
Lanches: 1 maçã, 1 tangerina, 2 fatias de "pão da terra", 1 iogurte magro. Chá de alcachofra.
A sopa foi baseada nesta, mas sem o uso da rama da cenoura. No fim acrescentei sumo de 1/2 laranja grande.

Lunch: Carrot, orange and ginger cream. Salmon salad with beets, zucchini and orange. Pear, chocolate and ginger crumble.
Snacks: 1 apple, 1 tangerine, 2 slices of "bread of the land", 1 low fat yogurt. Artichoke tea.

The soup was based on this one, without the use of carrot raw. In the end added the juice of 1/2 large orange

Almoço: Creme de cenoura, laranja e gengibre. Estufado de lentilhas e couve-flor com mozzarella.
Lanches: 1 maçã, 1 kiwi, 2 fatias de "pão da terra". Chá de alcachofra.

Lunch: Carrot, orange and ginger cream. Stewed red lentils ans cauliflower with mozzarrella cheese.
Snacks: 1 apple, 1 kiwi, 2 slices of "bread of the land". Artichoke tea.


Sexta-feira/Friday
 
 
Almoço: Creme de cenoura, laranja e gengibre. Sanduiche de tortilha e salada de rúcula, milho, cenoura, tomate e abacaxi.
Lanches: 1 pêra, 1 tangerina, 2 fatias de "pão da terra". Chá de alcachofra.

Lunch: Carrot, orange and ginger cream. Tortilla sandwich and arugula salad, corn, carrot, tomato and pineapple .
Snacks: 1 apple, 1 kiwi, 2 slices of "bread of the land". Artichoke tea.

Dia 1 na cozinha com dois crumbles de Outono / Day 1 in the kitchen with two Autumn crumbles



Mais um "Dia 1 na Cozinha". Desta vez a escolha do tema do mês caiu nos crumbles. Não um crumble qualquer, mas um crumble com fruta da época e como na minha fruteira, nesta altura, o que mais abunda são pêras e maçãs, aqui estão eles com as devidas combinações.
Um crumble de pêra com gengibre e chocolate, porque as especiarias e o chocolate aquecem estes dias curtos que vão esfriando. Um crumble de maçãs, fruta incontornável nesta época, com uvas passa porque é uma combinação infalível.
Por falta de ingredientes fiz um crumble muito básico: farinha + açúcar + manteiga, tendo apenas usado a farinha de espelta em vez da tradicional farinha de trigo sem fermento e o açúcar amarelo em vez do açúcar branco, mas por regra gosto de usar farinhas integrais e/ou de fruto secos para fazer os crumbles, enriquecendo o seu sabor e misturar-lhe aveia ou granola ou pedaços de amêndoa e avelã também teriam ficado bem, mas a despensa está a precisar de um up-grade.


Ingredientes:
Para o crumble (4 doses):
1/2 chávena de farinha de espelta
1/3 de chávena de açúcar amarelo
1/4 de chávena de manteiga fria cortada em pedaços
Os recheios:
Maçã e passas
1 maçã Fuji grande
Uvas passa a gosto
4 colheres de chá de açúcar amarelo
Pera, chocolate e gengibre:
2 peras médias
4 quadrados de chocolate de culinária
4 colheres de chá de açúcar amarelo
2 colheres de café de gengibre em pó


Preparação:
O crumble:
Numa taça misture a farinha e o açúcar.
Junte a manteiga e com as pontas dos dias vá esfregando os ingredientes, de forma a misturar a manteiga com a farinha e o açúcar até obter uma espécie de migalhas. Reserve.
Crumble de maçã e passas:
Descasque e descaroce a maçã e corte-a em cubos pequenos.
Distribua-a pelos dois ramequins, distribua as uvas passas e polvilhe cada um com 2 colheres de chá de açúcar.
Cubra com o crumble.



Crumble de pera, chocolate e gengibre:
Numa taça misture o açúcar e o gengibre em pó. Reserve.
Descasque e descaroce as peras e corte-a em cubos pequenos.
Distribua-a pelos dois ramequins e polvilhe cada um com 2 colheres de chá de mistura de açúcar e gengibre e misture dois quadrados de chocolate partidos em pedaços.
Cubra com o crumble.
Leve os ramequins ao forno pré-aquecido a 180º, durante cerca de 20 minutos, ou até o crumble se apresentar com uma côr dourada.

Another "Day 1 in the kitchen". This time the choice for the theme of the month fell in crumbles. Not any crumble but a crumble with seasonal fruit, and  as in my fruit bowl, in this time of the year, pears and apples are abundant, here they are with the appropriate combinations.
A pear crumble with ginger and chocolate, because chocolate and spices warm these shorter and colder days. An apple crumble, fruit unavoidable in autumn, with grapes  because this is an unbeatable combination.
 For lack of ingredients I made a very basic crumble : flour + sugar + butter, having only used the spelled flour instead of traditional wheat flour without yeast and brown sugar instead of white sugar, but as a rule I like to use whole grain flour and / or dried fruit to make crumbles, enriching its flavor and mix in it oatmeal or granola or bits of almond and hazelnut also would have been fine, but the pantry is in need of an up-grade.

Ingredients:
For the crumble (4 doses):
1/2 cup spelled flour
1/3 cup brown sugar
1/4 cup cold butter, cut into pieces
The fillings:Apple and raisins1 large Fuji apple
Grapes goes to taste
4 teaspoons of brown sugar
Pear, chocolate and ginger:2 medium pears
4 squares of cooking chocolate
4 teaspoons of brown sugar
2 coffee spoons ground ginger
 
 
Preparation:
The crumble:In a bowl mix the flour and sugar.
Add the butter and your finger tips rubb the ingredients in order to blend the butter and the flour and sugar until a kind of crumbs. Reserve.
Apple and raisins crumble:Pit and peel the apple and cut into small cubes.
Distribute it by two ramekins, distribute the raisins and sprinkle each with 2 teaspoons of sugar.
Top with the crumble.
Pear, chocolate and ginger crumble :In a bowl mix sugar and ginger powder. Reserve.
Pit and peel the pears and cut into small cubes.
Distribute it by two ramekins and sprinkle each with 2 teaspoons sugar mixture and ginger and mix in two squares of chocolate broken into pieces..
Top with the crumble.

Take the ramequins to the oven, preheated to 350º F for about 20 minutes, or until the crumble gets golden.

Projecto Marmita - Semana 39/2013 / Lunchbox Project - Week 39/2013


Mais uma semana curta em marmitas e continuo a recorrer ao congelador e de propósito: acabar com as marmitas que por lá descansam para depois fazer uma renovação. Aposto nos acompanhamentos com legumes para transformar cada refeição. Esta semana uma embalagem com tiras de peru dividiu-se por duas marmitas, mas de modos diferentes e acabaram-se as lulas que tanto desgosto me deram.

Snacks: 1 pear, 1 tangerine, 2 slices of challah with plum. 1 greek yoghurt. Horsetail tea.

Quinta-feira / Thursday
 
 
Almoço: Sopa de brócolos e alho francês. Wrap com peru e pimentos e salada de alface e tangerina com sementes de sésamo pretas e oregãos.
Lanches: 1 pêra, 2 fatias de “challah”. Kefir com ameixa. Chá de cavalinha.

Lunch: Broccoli and leeks soup. Wrap with turkey stripes and peppers plus a salada of lettuce and tangerine with black sesame seeds and oregano.
Snacks: 1 pear, 2 slices of “challah”. Kefir with plum. Horsetail tea.

Almoço: Creme de legumes. Trigo sarraceno com lulas e curgete.
Lanches: 1 pêra, 1 tangerina, 2 fatias de challah com ameixa. 1 iogurte magro. Chá de cavalinha.

Lunch: Vegetables creamy soup. Buckwheat with squid and courgette.
Snacks: 1 pear, 1 tangerine, 2 slices of challah with plum. 1 low fat yoghurt. Horsetail tea.

Creme de abóbora e alho francês com croutons / Pumpkin and leek cream with croutons

 

O Outono quis-se fazer notar rapidamente e entrou sem quase pedir licença. Têm sido dias de chuva e às vezes frios e desconfortáveis. As sopas voltam á ribalta, fumegantes, aromáticas e  cheias de sabor

Ingredientes:
1/2 abóbora manteiga assada com ervas aromáticas
1 batata
1 dente de alho
1 alho francês sem rama
Sal q.b.
Azeite q.b.
1 pão do dia anterior
1 colher de café de aneto (Espiga)
1 colher de café de mistura de salsa e limão (Espiga)


Preparação:
A sopa
Tradicional
Retire a casca à abóbora assada, descasque a batata e corte tudo em pedaços pequenos.
Corte o alho francês em rodelas.
Esmague e pele o dente de alho.
Deite um fio de azeite no fundo de uma panela e coloque os legumes.
Deixe refogar lentamente em lume médio com a panela tapada até os legumes amolecerem, mas sem deixar queimar.
Cubra-os com água quente ou caldo de legumes, tempere de sal e deixe cozer.
No fim, triture, retifique os temperos e a espessura do creme, acrescentando água quente se necessário.
Bimby:
Retire a casca à abóbora assada, descasque a batata e corte tudo em pedaços pequenos.
Corte o alho francês em rodelas.
Esmague e pele o dente de alho.
Coloque o alho francês e o dente de alho no copo, junte um fio de azeite e rale 5seg/vel. 5.
Com a espátula junte os legumes que ficaram na borda do copo, no fundo da bimby.
Refogue: 5 min./100º/vel. 1.
Acrescente a batata e a abóbora, cubra os legumes com água quente ou caldo de legumes, tempere de sal e programe: 25 min. /varoma/vel. 1.
No fim, triture progressivamente 3-5-7.
Retifique os temperos e as espessura do creme, acrescentando mais água quente se necessário.

Os croutons:
Corte o pão em cubos pequenos.
Numa tigela misture azeite e as ervas aromáticas.
Acrescente o pão e envolva com as mãos até os cubos ficarem bem impregnados.
Leve a tostar em lume médio/alto numa frigideira.
Reserve e sirva com a sopa.

1/2 roasted butternut pumpkin with herbs
1 potato
1 clove of garlic
1 leek
Salt to taste
Olive oil to taste
1 bread from the previous day
1 tsp dill ("Espiga")
1 teaspoon of mixture of parsley and lemon ("Espiga")


Preparation:
The Soup
Traditional
Peel the roasted pumpkin and the potato and cut everything into small pieces.
Cut the leek into slices ..
Skin and crush the garlic clove.
Pour a little olive oil in the bottom of a pan and place the vegetables.
Let it cook slowly over medium heat with the pan covered until the vegetables soften, but do not let it burn.
Cover with hot water or vegetable broth, season with salt, and let it cook.
In the end, grind the vegetables, rectify the seasoning and thickness of cream, adding hot water if necessary.

Thermomix:
Peel the carrots and potatoes and cut into small pieces.
Remove the raw leek and cut it into slices.
Skin and crush the garlic clove.
Place the leek and garlic clove in the cup, add a little olive oil and grate 5seg/vel. 5.
With a spatula stir the vegetables that were on the edge of the cup at the bottom of Bimby.
Saute: min./100 5 º / vel. 1.
Add the potato and pumpkin, cover the vegetables with hot water or vegetable broth, season with salt and schedule: 25 min./varoma/vel. 1.
In the end, grind, steadily, 3-5-7.
Rectify the seasoning and thickness of cream, adding more hot water if necessary.

The croutons:
Cut bread into small cubes.
In a bowl mix olive oil and the herbs.
Add the bread and wrap with your hands until the cubes become well soaked.
Take the roasting heat on medium / high in a skillet.
Reserve and serve with the soup.

"Cozinha rápida" na marmita


 
 
A Ana, d` A Marmita Lisboeta lançou um desafio a que eu não podia faltar: pede uma receita rápida que funcione na marmita.
Como marmiteira que sou comecei logo a discorrer em marmitas fáceis e rápidas de preparar. Quis a feliz coincidência que nessa altura eu trouxesse uma marmita muito rara nos meus almoços: uma sanduiche, que eu adorei e pensei: porque não esta? Fácil, pode ser servida a quente ou a frio, conforme o gosto e a disponibilidade do local de trabalho de cada um. Pode ser uma refeição só por si ou enriquecida com os acompanhamentos.
É verdade que as sanduiches são raras na minha marmita, mas apenas para evitar ingerir mais pão, o meu vicio alimentar preferido. Se não fosse isso, estariam certamente mais vezes presentes nas minhas marmitas de tão versáteis que pode ser.

 
Ingredientes:
1 pão de girassol
1 ovo escalfado com a gema bem cozida
Rúcula q.b.
4 rodelas de tomate
1 fatia de queijo a gosto
 
Preparação:
Escalfe o ovo em água a ferver com um pouco de vinagre. Pode ser uma tarefa ingrata, mas se vai usar o ovo na sanduiche o sucesso é garantido.
Retire o ovo da água com a ajuda de uma escumadeira e seque-o em papel de cozinha.
Corte o tomate em rodelas, retire as sementes  e deixe repousar as rodelas sobre duas folhas de papel de cozinha para largarem qualquer água que tenham e, assim, manter a sanduiche seca.
Abra o pão a meio e comece por colocar numa das metades folhas de rúcula a gosto, 2 rodelas de tomate, o ovo, a fatia de queijo, mais 2 rodelas de tomate e folhas de rúcula e termine com a restante metade do pão.
 
 
 
 
Dicas:
- Se o pão for muito pesado retire parte do miolo, ou então corte-o em 3 fatias, utilizado as pontas para a sanduiche e reserve a fatia do meio para o lanche.
- Deixe escalfar durante uns 8 a 10 minutos para ter a certeza que a gema vai cozer bem. Não se esqueça que só vai comer o ovo no dia seguinte, que provavelmente vai sujeitar a marmita a diferenças de temperatura durante o transporte e não queremos ficar em casa com um ataque de salmonelas.
- Se puder acompanhe com uma sopa de legumes ou uma salada. Incrementa, assim, a ingestão de vegetais e torna mais equilibrada a refeição.

Ana, from the blog "A Marmita Lisboeta" launched a challenge that I could not miss: asks for a quick recipe that works for the lunchbox.

It was a happy coincidence that this time I brought one very rare meal in my lunch: A sandwich, which I loved and thought: why not this? Easy, can be served hot or cold, according to taste and availability of workplace of each one. It can be a meal in itself or enriched with accompaniments.
It is true that the sandwiches are rare in my lunchbox, but only to avoid eating more bread, my favorite food addiction. Without it, they would certainly be present more often in my lunchbox so versatile it can be.

Ingredients:
1 loaf of sunflower
1 poached egg with the yolk well cooked
Arugula to taste
4 slices of tomato
1 slice of cheese to taste

Preparation:
Poach the egg in boiling water with a little vinegar. It can be a thankless task, but to use the egg in the sandwich the success is guaranteed.
Remove the egg from the water with the help of a slotted spoon and dry it on kitchen paper.
Cut the tomatoes into slices, remove the seeds and soak the slices on two sheets of kitchen paper to deploy any water they have and thus keep the sandwich dry.
Open the bread in half and start by putting in one half arugula leaves to taste, 2 tomato slices, the egg, a slice of cheese, plus 2 slices of tomato and leaves of arugula and finish with the remaining half of bread.

Tips:
- If the bread is too heavy remove part of the kernel, or cut it into 3 slices, using to the sandwich the ends and use the midle slice to a snack.
- Let the egg poach for about 8-10 minutes to make sure the yolk will cook well. Do not forget that you will only eat the egg the next day, it will likely be subject to a pot temperature differences during transport and do not want to stay home with a bout of salmonella.
- If you can accompany it with a vegetable soup or a salad. Increments the amount of vegetables to your meal and makes it a more balanced meal.

Projecto Marmita Semana 38/2013 / Lunchbox Project Week 38/2013

Para uma semana mais curta, o congelador foi o grande amigo das marmitas, com exceção das sopas e das doses de legumes salteados/grelhados que acompanharam as marmitas.

For a shorter week, the freezer was the great friend of lunchboxes, with the exception of soups and the 2 doses of sautéed vegetables/grilled that accompanied the lunchboxes.

 
Segunda-feira/Monday:

Almoço: Sopa de espinafres. 2 fatias de tortilha com legumes salteados, ou melhor, grelhados com recurso ao micro-ondas. Pera assada com moscatel.

Lanches: 1 ameixa, uvas, 2 fatias de “challah” com ameixa. 1 Iogurte grego. Chá de cavalinha.

 Os legumes (serve 2 doses e meia):
Descasque e corte uma batata-doce e ¼ de chuchu em pedaços pequenos. Coloque num recipiente próprio para o micro-ondas, tempere com um pouco de azeite e sal e tape com pelicula aderente. Fure a pelicula e leve ao micro-ondas por 4 minutos na potência máxima. Deixe descansar 1 minuto e com cuidado retire a película aderente. Com a ponta de uma faca afiada verifique se a batata está cozida.
Num outro recipiente junte ½ curgete, com casca, cortada em cubos e 6 tomates cereja em metades. Acrescente a batata e o chuchu. Regue com mais um fio de azeite, junte uma pitada de flor de sal, ½ colher de café piripiri moído e 1 colher de café de alho em pó. Misture muito bem e espalhe sobre o tabuleiro do micro-ondas. Programe a função grill no máximo por cerca de 20 minutos (vá vigiando).

Lunch: Spinach soup. 2 slices of “tortilla” with sauté vegetables mixture. Better said: grilled in the microwave.
Snacks: 1 plum, grapes, 2 slices of plum “Challah”. 1 greek yoghurt. Horsetail tea.


 
Vegetables (serves 2 1/2 luncboxes):
Peel and cut one medium sweet potato and ¼ chayote into small pieces. Place in a suitable container for microwave, season with a little olive oil and salt and cover with cling film. Stick the film and microwave for 4 minutes at full power. Let stand for 1 minute and carefully remove the cling film.
With the tip of a sharp knife make sure the potatoes are cooked.
In another bowl combine ½ zucchini, unpeeled, cut into cubes and 6 cherry tomatoes cuted into halves. Add the potatoes and chayote. Drizzle over a little olive oil, add a pinch of sea salt, ½ teaspoon ground chilli and 1 teaspoon garlic powder. Mix well and spread on the tray of the microwave. Set the grill function for a maximum of 20 minutes (go watching).

Almoço: Sopa de espinafres. Empadão de carne e legumes grelhados. Pêra assada em Moscatel.
Lanches: 1 maçã, 1 tangerina, 2 fatias de "challah" com ameixa. 1 iogurte grego. Chá de cavalinha.

Lunch: Spinach soup. Smashed potato with meat and grilled vegetables. Roasted pear in Moscatel wine.
Snacks: 1 apple, 1 tangerine, 2 slices of challah with plum. 1 greek yoghurt. Horsetail tea.

Quinta-feira / Thursday

Almoço: Creme de legumes. Penne com legumes, ovo e queijo ralado. Pêra assada em Moscatel.
Lanches: 1 maçã, uvas, 2 fatias de “challah”. 1 iogurte grego. Chá de cavalinha.

Lunch: Vegetables creamy soup. Pasta with grilled vegetables (the ones from Monday, plus some tomatos, boiled egg and parmesan cheese. Roasted pear in Moscatel wine.
Snacks: 1 apple, grapes, 2 slices of “challah”. 1 greek yogurt. Horsetail tea.

Dia Mundial do Pão 2013 - Challah de Ameixas / World Bread Day 2013 - Challah with plums


Sonhei muito tempo com uma certa kuchen que andou pelo "Caos na Cozinha" da Mariana, mas entretanto, com preguiça de abrir o computador para ir á fonte da receita, comecei a folhear o meu livro preferido de receitas de pão e dei com este challah, um pão de origem judaica, cheio de história e tradição, e depois olhei para as ameixas na fruteira e no meu sonho as ameixas, ligeiramente ácidas, combinaram perfeitamente com o pão doce. O pão maior que já cozinhei provavelmente e que será para repetir, mesmo sem a fruta.
Um pão para celebra o seu Dia Mundial e a resposta ao desafio anual da Zorra. Vamos fazer pão e celebrar a 8ª edição do "World Bread Day.

A bread to celebrate its World Day and the anual challenge of Zorra. Let's make bread and celebrate the 8th edition of "World Bread Day".

Ingredientes:
500 gr. de farinha T65
1 colher de chá de sal
4 colheres de sopa de mel claro (substituí por 4 colheres de sopa de açúcar amarelo)
50 gr. de manteiga derretida
2 ovos batidos
240 ml de água 175 ml de água
1 1/4 de fermento desidratado
4 ameixas
Compota de abrunho para pincelar ou 1 ovo

Preparação:
Coloque os ingredientes, com exceção das ameixas, na cuba da máquina de pão e programe "amassar"
No fim transfira a massa para uma superfície enfarinhada e estenda um rolo com cerca de 70 cm.
Enrole em forma de espiral e coloque-o numa forma de aro com 20 cm de diâmetro (não usei forma de aro).
Corte as ameixas em fatias e espalhe-as pela espiral formada com a massa. Dica: a massa cresce bastante deslocando as ameixas do sitio, por isso não tenha receio de colocar muita ameixa.
Deixe fermentar num local morno até a massa atingir o topo da forma (deixei passar este ponto e a massa cresceu também sobre o aro).
Pincele com o ovo batido ou com a geleia derretida.
Leve a assar em forno pré-aquecido a 180º durante 30 minutos, cobrindo, ao fim de 10 minutos, com papel de alumínio para não queimar.

Ingredients:
500 gr. Flour T65
1 teaspoon salt
4 tbsp clear honey (replace by 4 tablespoons brown sugar)
50 gr. melted butter
2 eggs, beaten
240 ml water 175 ml de água
1 1/4 of dried yeast
4 plums
Sloe jam or 1 egg for brushing
 
Preparation:
Place ingredientes, except plums, in the bowl of bread machine and set "kneading".
In the end transfer the dough to a floured surface and extend a roll of about 70 cm.
Wrap in a spiral and place it in a ring-shaped with a diameter of 20 cm.
Cut the plums into slices and spread them by spiral formed with the dough. Tip: the dough rises a lot, displacing the plums from it`s place, so do not be afraid to put too much plum.
Let rise the dough in a warm place until the dough reaches the top of the form (I missed this point and the dough grew over the rim).
Brush the bread with beaten egg or melted jelly.
 Bake in a preheated oven at 180º, for 30 minutes, covering it in the end of 10 minutes with aluminum foil to prevent burning.

Segunda-feira/Monday:

Almoço: Sopa de couve branca. Bacalhau com grão, cebola, pimento e tomate + rúcula
Lanches: 1 kiwi, 1 maçã, amêndoas. 1 iogurte magro. Chá de cavalinha.

Este bacalhau resultou das sobras do almoço de domingo: bacalhau assado que transformei num novo prato, juntando-o a um salteado de cebola, pimento vermelho, grão cozido e tomate chucha, tudo levemente temperado com uma pitada de caril e acompanhado de uma mão cheia de folhas de rúcula “on the side”. (Ver receita em “As Receitas damarmita - marmitas de peixe”)

Lunch: White cabbage soup. Codfish with chickpea, onion, red pepper ando tomatoes, plus a handful of arugula.
Snacks: 1 kiwi, 1 apple, almonds. 1 low fat yoghurt. Horsetail tea.

This lunch it´s a new meal from a leftover of our sauday lunch: roasted codfish. I mixed it with sautéed onion, red pepper, chickpea and tomatoes and a little taste of powder curry, it was served with an handful of arugula “on the side”. (See recipe in “As receitas da marmita” – in portuguese).

 
Terça-feira / Tuesday

Almoço: Creme de legumes. Lulas com puré e salada.
Lanches: 1 kiwi, 1 tangerina, amêndoas. 1 iogurte magro. Chá de cavalinha.

Da minha cozinha (e de todas as cozinhas, suponho) não saem só coisas boas. Às vezes saem refeições que caem entre o aceitável e o sofrível ... como estas lulas que se queriam grelhadas e acabaram num misto de grelhado e estufado. Confesso que a dada altura tive vontade de as deitar ao lixo, ao estilo de um "Masterchef", mas não suporto desperdícios e como alimentar é, antes de mais, um ato de sobrevivência, dei-lhes uma chance em detrimento do sabor excelente que mereciam.

Lunch: Vegetable cream soup. Squid with smashed potato and salad.
Snacks: 1 kiwi, 1 tangerine, almonds. 1 low fat yoghurt. Horsetail tea.

From my kitchen (and in all cuisines, I suppose) do not leave only good things. Sometimes I cook meals that fall between the acceptable and tolerable ... as those squid who should be grilled and ended up in a mix of grilled and stewed. I confess that at some point I wanted to throw them in the trash, in a "Masterchef" style, but I just can not stand waste and how food is, first and foremost, an act of survival, I gave them a chance at the expense of the great taste that deserved to have.
 

 
Quarta-feira / Wednesday

Almoço: Sopa de couve branca. Sanduiche de ovo, tomate, rucula e queijo + salada de couve branca e roxa, rucula  e tomate com molho de iogurte
Lanches: 1 maçã, 1 pêra, amêndoas. 1 iogurte magro. Chá de rosa mosqueta.

Lunch: White cabbage soup. Hot sandwich with boiled egg, tomato, arugula and cheese, plus a white and red cabbage, arugula an tomato salad with Yogurt sauce (Griek yogurt + olive oil +mustard + chive).
Snacks: 1 apple, 1 pear, almonds. 1 low fat yogurt. Rosehip tea.



Quinta-feira / Thursday

Almoço: Creme de legumes. Wrap de pasta de salmão com salada de rúcula e tomate chucha.
Lanches: 1 ameixa, 1 maçã, amendoas. 1 iogurte magro. Chá de cavalinha.

Lunch: Vegetables creamy soup. Wrap with salmon paste and arugula and tomato salad.
Snacks: 1 plum, 1 apple, almonds. 1 low fat yogurt. Horsetail tea.
 

Sexta-feira /Friday

Almoço: Creme de legumes. Bulgur com cenoura ralada, ervilhas, salmão e aneto.
Lanches: 1 ameixa, 1 pêra, 1 pão de mistura. 1 iogurte magro. Chá de cavalinha.

Lunch: Vegetable cream. Bulgur with grated carrots, peas, salmon and dill.
Snacks: 1 plum, 1 pear, 1 bread mixture. 1 low fat yogurt. Horsetail tea.

Sumo de beterraba e hortelã-chocolate / Beet and mint-chocolat juice


 Como os dias estão ainda de sol e de calor fui ainda buscar este sumo aos dias do Verão que já passou.

Ingredientes:
1 beterraba grande crua, descascada
1 maçã descaroçada (podem deixar a casca)
Algumas folhas de hortelã-chocolate
500 ml de água fria
Gelo a gosto
Açúcar ou outro adoçante a gosto




Preparação:
Bimby:
Coloque a beterraba e a maçã em pedaços no copo da bimby, juntamente com as folhas de hortelã e triture 7seg./vel.5.
Acrescente a água e triture novamente 2 min./vel. 9.
Acrescente mais água se ficar muito espesso e adoce a gosto.
Sirva com pedras de gelo.
Tradicional:
Coloque a beterraba e a maçã em pedaços, juntamente com as folhas de hortelã, no copo misturador e triture.
Acrescente a água e triture novamente até obter um sumo.

Sirva com pedras de gelo.


As the days are still sunny and warm I was still get this juice from the gallery of the days of summer that has just passed.

Ingredients:
1 large raw beetroot, peeled
1 apple pitted (can leave the peel)
A few leaves of mint-chocolate
500 ml of cold water
Ice to taste
Sugar or other sweetener to taste


 Preparation:Thermomix:
Place the beets and apple pieces in thermomix`s cup along with the mint leaves and grind 7seg./vel.5.
Add water and grind again: 2 min. / Level. 9.
Add more water if it gets too thick and sweeten to taste.
Serve with ice cubes.
Traditional:
Place the beets and apple pieces, along with the mint leaves, in the blender and grind.
Add water and grind again until you get a juice.
