Tarte de lima e manga com merengue / Creamiest Lime Cream Meringue Pie



Os desafios Dorie às Sextas são sempre surpreendentes. Esta receita é de um desafio antigo que aguardava publicação fora de horas. Fiz algumas aldrabices, ou melhor, simplifiquei e usei uma receita mais simples de curd e uma massa de compra (ainda não foi desta que me aventurei a fazer massa folhada).
A doçura combinada com a acidez da lima e a textura do merengue tornam-na perfeita para uma sobremesa.

Ingredientes:
Para o curd (Fonte: Anasbageri):
2 ovos
75 gr. de açúcar
Raspa de 1 lima
Sumo de 1 laranja e de 2 limas (2,5 dl no total)
2 colheres de sopa de manteiga
1 colher de sopa de farinha Maizena
1 pedaço de gengibre, com cerca de 1 cm, ralado
Para o merengue:
2 claras
1/4 chávena de açúcar
Para finalizar:
1 embalagem de massa folhada (usei quadrados de massa folhada "Pasta do Dia")
1 manga

Preparação:
Pré-aqueça o forno a 200º.
Comece por forrar formas pequenas de tarte com a massa folhada, mantendo o papel vegetal entre a forma e a massa e cortando o excedente de massa nas bordas.
Cubra cada uma com um quadrado de papel vegetal e encha com feijões secos.
Leve ao forno durante 15 a 20 minutos ou até a massa dourar.
Retire do forno, deixe arrefecer e descarte os feijões e o papel vegetal. Reserve.
Prepare o curd:
Tradicional (Fonte: Anasbageri):
Numa tigela coloque metade da raspa da lima.
Por cima da tigela coloque um passador de rede.
Num tachinho anti-aderente, misture o açúcar, a farinha, o gengibre, um pouco do sumo de fruta, os ovos batidos e metade da raspa da lima.
Misture bem para evitar grumos, acrescente o resto do sumo e leve a lume médio sem parar de mexer. Em minutos irá começar a sentir o preparado a engrossar, continue a mexer sempre até conseguir ver o fundo do tacho. Retire do lume e  acrescente a manteiga, batendo bem.
Passe o preparado pelo passador de rede.
Para evitar que  se forme uma “pele” na superfície do curd, cubra-o com película aderente enquanto arrefece, de forma a que o plástico fique em contacto com o creme.
Guarde no frigorífico durante 4 horas ou durante a noite.
Thermomix/Bimby (Fonte: Sabores de Canela):
No copo deite o açúcar, o gengibre e a casca da lima, só mesmo a parte exterior. Rale 15 segundos/vel.9.
Junte os restantes ingredientes, com excepção da manteiga e programe 8 minutos/vel. 4/80º.
No final acrescente a manteiga pelo bocal da tampa e triture 2 min./vel. 7.
Para evitar que  se forme uma “pele” na superfície do curd, cubra-o com película aderente enquanto arrefece, de forma a que o plástico fique em contacto com o creme.
Guarde no frigorífico durante 4 horas ou durante a noite.
O merengue:
Tradicional:
Bata as claras, com a batedeira, em velocidade média, até se tornarem opacas.
Com  a batedeira a trabalhar, acrescente o açúcar aos poucos, continuando a bater até as claras ficarem brilhantes e formarem picos.
Thermomix/Bimby:
No copo bem limpo e seco e com a borboleta encaixada, deite as claras e programe 3 min/vel. 3 e 1/2.
Mantendo a máquina em funcionamento na velocidade 3, vá acrescentado o açúcar aos poucos, pelo bocal da tampa, até estar todo incorporado nas claras.
Finalizar:
Corte a manga em cubos pequenos e distribua pelas formas.
Mexa o creme com a vara de arames e encha as formas.
Deite colheradas generosas de merengue sobre o creme, uma vez que irá encolher no forno, e leve ao forno até dourar.
Retire do forno, deixe arrefecer durante cerca de 15 minutos e refrigere durante 3 horas antes de servir.

O creme pode ser acondicionado e congelado até 2 meses. Descongele durante a noite no frigorifico.



In English

The Dorie às Sextas (Fridays with Dorie) challenges are allways surprising. This recipe it`s from a former challenge that waited for an out of hours publication. I made some cheating, meaning, simplified and used a simpliest curd recipe and bought puffy pastry dough instead of making one of Dorie`s dough recipes. 
It`s sweetness mixed with the lime acidity and the soft texture from meringue make it perfect to serve as dessert.

Ingredients:
The curd:
2 eggs
75 gr. sugar
Grated zest of 1 lime
Fresh juice of 1 Orange and 2 limes (2,5 dl total)
2 tablespoons butter
1 tablespoon cornstarch
1  ?? inch chunk of fresh ginger, peeled and finely grated
For the meringue:
2 white eggs
1/4 cup sugar
To finish:
1 pack puffy pastry dough
1 mango

Preparation:
Preheat the oven to 400Fº.
Start to fit small tart pans with the dough, keeping the parchment paper that comes with it. Trim the  excess dough flush with the edges of the pans.
Fit each one with other parchment paper and fill with dried beens.
Bake for 15 to 20 minutes or until the dough gets golden.
Transfer to a cooling rack and cool to room temperature. Remove paper and beans. Reserve.
Make the curd:
Traditional (Source: Anasbageri):
In a bowl put half the lime zest.
Cover the bowl with a  fine strainer.
In a non-stick pan whisk the sugar, cornstarch, ginger, a litle fruit juice, the eggs, whisked, and the other half lime zest.
Whisk well, so it won`t get lumps, add the remaining juice and cook in medium heat, whisk in constantly.
In a few minutes the cream will start to thicken, go on whisking until the whisk leave tracks on the bottom of the pan.
Remove the pan from the heat and add the butter and whisk very well.
Pour the cream trough the fine strainer.
Pour the cream into a container, press a piece of plastic wrap against the surface and refrigerate the cream for at least 4 hours, or overnight.
Thermomix/Bimby (Source: Sabores de Canela):
In the bowl put sugar, ginger and the lime zest. Set:15 seconds/speed 9.
Add the remaining ingredientes, except the butter and set: 8 minutes/speed 4/80º.
In the end add the butter and set 2 minutes/speed 7.
Pour the cream into a container, press a piece of plastic wrap against the surface and refrigerate the cream for at least 4 hours, or overnight.
 (The cream can be packed airtight and frozen for up to 2 months; thaw overnight in the refrigerator.)

Ó Mãe queria tanto uns BEATS novos!

Os meus beats andam sempre comigo. São assim pequeninos, mas com muita capacidade, até parece impossível! E não derramam gota de sopa, mesmo quando vêm aos trambolhões. Os beats são os recipientes da lancheira Keat, de que já vos falei aqui. São aptos para o microondas, de fácil limpeza e arrumação e são... giros, muito giros. Cada conjunto além de 3 beats traz uma molheira, que uso a maioria das vezes para trazer as minhas amêndoas e nozes para um snack a meio da manhã .

Projecto Marmita Semana 17/2014 - Lunchbox Project Week 17/2014

Fim de semana festivo, mas sem preocupações em preparar refeições. Sabe bem quebrar rotinas e há sempre com que improvisar uma boa refeição de escritório.

Festiv weekend, without worries abaut preparing meals. It`s good to break the routine and there is allways something to improvise the lunchbox meals.

Segunda-feira/Monday
Almoço: Sopa de couve branca. Arroz de salsa com peru grelhado e brócolos cozidos.


Lunch: White cabbage soup. Parsley rice with grilled turkey and boiled broccoli.

Terça-feira/Tuesday
Almoço: Sopa de couve branca. Batata doce e curgete às camadas no forno com tomate cereja e requeijão.


Lunch: White cabbage soup. Baked sweet potato and zuchini in layers with cherry tomatoes and cottage cheese.

Quarta-feira/Wednesday
Almoço: Sopa de couve branca. Esparguete à bolonhesa com curgete e tomate cereja.


Lunch: White cabbage soup. Spaghetti Bolognese with zucchini and cherry tomato.

Quinta-feira/Thursday
Almoço: Creme de lentilhas. Salada com nacos de filete de Skrei. (Dica: retire a pele ao peixe frito para reduzir a ingestão de gorduras saturadas e de calorias. Nesta marmita a pele do peixe só ficou para a foto. Depois retirei-a).


Lunch: Lentils creamy soup. Salad with fried Skrei (Tip: withdraw the skin from the fried fish, in that way you will ingest less saturated fat anda calories. In thes lunchbox the fish skin only stay for the photo, then I removed it).

Quickbread com arandos / Quickbread with cranberries



A mesma receita com algumas alterações. É assim quando encontramos uma receita que resulta sempre. Não queremos outra e vamos brincando com ela, acrescentando-lhe outros aromas e sabores. É assim com este quickbread. Já foi simples, já teve maçã e tomilho e hoje tem chá de frutos do bosque e arandos. É um pão doce, mas para a semana vai ser novamente tempo de receita de pão, só que salgado, a pedido do "Dia 1 na Cozinha". É já no próximo dia 1 de Maio. Se não conhecem a iniciativa espreitem aqui. Para quem não conhece, mas gostava de participar, começar com uma receita de pão seria uma belíssima estreia.

Ingredientes:
230 gr. farinha de espelta
170 gr. farinha integral
100 ml. de leite
1 iogurte natural
50 ml de chá de frutos vermelhos
1 colher de sopa de óleo
1 colher de sopa de mel
1 colher de chá de sal
1 colher de chá de fermento em pó
1 colher de chá de bicarbonato de sódio
1 mão cheia de arandos secos

Preparação:
Pré-aqueça o forno a 180º.
Barre uma forma de pão ou bolo inglês com manteiga e forre com papel vegetal (ou use uma forma de silicone).
Misture os ingredientes secos, incluindo os arandos, numa taça grande.
Noutra taça, misture o leite, o iogurte, o chá, o óleo e o mel.
Acrescente os ingredientes líquidos aos secos e misture rapidamente com um garfo ou colher de pau.
Transfira a massa para a forma.
Leve ao forno durante aproximadamente  30 minutos, fazendo o teste do palito para ver se está pronto.
Desenforme  e deixe arrefecer sobre uma grade,

The same recipe with some changes. It happens when you find a recipe that works allways well. You don`t want another and go on playing around, adding new scents and flavours. It`s just the way with this quickbread. It has been simple, it had apple and thyme and today has tea forest fruits and cranberries. It`s a sweet bread, but next week will be time for another bread recipe, but salty, required by "Day 1 in Kitchen". It will be next May 1st. If you don`t know the iniciative take a look here. For those who doesn`t now but would like to join the group to start with a bread recipe would be a great premiére.

Ingredients:
230 gr. spelt flour
170 gr. wholewheat flour
100 ml milk
1 natural yogurt
50 ml Tea forest fruits
1 tblsp oil
1 tblsp honey
1 tspoon salt
1 tspoon baking powder
1 tspoon baking soda
1 hadfull of dried cranberries

Preparation:
Preaheat the oven to 180ºC/350ºF.
Grase a loaf pan or an English cake tin with butter and line with parchment paper (or use a silicone tin).
Combine the dry ingredients, including the cranberries, in a large bowl.
In another bowl mix together milk, yogurt, tea, oil and honey.
Add the liquid ingredients to the dry ones and mix everything quickly.
Place the dough in the loaf pan or cake tin.
bake for approximately 30 minutes, doing the toothpick test to see if it`s cooked.
Unmold an let colol in a wire rack.

Burek de sapateira e alho francês / Crab and leek burek


Continuamos com a sapateira. Tal como tinha prometido. Se o recheio ficou muito bom, o que fiz com as sobras ainda ficou melhor. 
Lá por casa o lema "reciclar, reduzir e reutilizar" vale para muita coisa, inclusive para as sobras de comida. Além das rolhas, lâmpadas, pilhas, óleo, papel, plástico e metal, as sobras da comida também têm o seu destino que não passa pelo caixote do lixo. Se não se servir na refeição seguinte,aquecida ou reciclada, vai para o congelador e em último caso há-de sempre servir para uma marmita. Como a sapateira já tinha sido congelada, não podia limitar-me a congelar o recheio, que tinha ingredientes (maionese) que não devem ser congelados e porque depois de descongelado um alimento não se volta a congelar a menos que seja cozinhado. A urgência neste aproveitamento impôs-se, então. Sabia que queria fazer um "burek", um daqueles lindos "burek" do maravilhoso livro "Iguarias Saudáveis" da Popina. Restavam algumas dúvidas no quanto ao recheio, mas acabei por encontrar a inspiração aqui (nota: o Salsa Verde acabou, mas a Lia continua a aventura no "Lemon & Vanilla").

Ingredientes:
1 alho francês grande fatiado (só a parte branca)
200 gr. de recheio de sapateira
100 gr. de requeijão
Azeite q.b.
Sal q.b.
6 folhas de massa filo



Preparação:
Refogue o alho francês num pouco de azeite, em lume brando, até amolecer. Reserve.
Numa taça misture o recheio de sapateira com o requeijão esfarelado.
Acrescente o alho francês e envolva.
Para trabalhar a massa filo, faça-o rapidamente, mantendo as folhas que não está a usar cobertas com um pano húmido para que não sequem.
Pincele uma folha de massa filo com azeite e coloque outra folha por cima.
Coloque as duas folhas de massa numa forma rectangular ou quadrada, deixando cair o excesso da massa sobre de um dos lados da forma. Pincele com azeite.
Proceda da mesma maneira com mais 2 folhas de massa e estenda por cima das primeiras folhas de maneira a que o excesso destas novas folhas caia sobre o lado oposto da forma.
Espalhe metade do recheio sobre a massa e cubra com 2 folhas de massa filo.
Repita até acabar a mistura de sapateira e alho francês (fiz apenas 2 camadas de recheio), devendo terminar com uma camada de recheio.
Dobre a massa que ficou nos lados da forma sobre o recheio de forma a cobrir o burek e pincele com azeite.
Leve a cozer em forno pré-aquecido a 180º durante cerca de 40 minutos até a massa ficar bem dourada.

Let`s go on with the crabSuch as promissed. If the crab filling was very good, what I didi with the leftovers was even better. 
At home the motto is "recicle, reduce e reuse" for many things, including food leftovers. Besides, corks, lamps, batteries, cooking oil, paper, plastic and metal, the foof leftovers also have it`s own destiny away from the garbage can. If it won´t serve the next meal, heaten or remade, it will go to the freezer and in the latter will serve for a lunchbox. As the crab had been allready frozen I just couldn`t freeze the filling in wich there unfrozen ingredientes (mayonnaise) and because we should not freeze any food that has ben defrosted unless we cook it before. The urgency in using this leftover was major. What I knew was that I wantwd to cook a "burek", one of those beautifull "burek" from the wonderfull "Book of Baking" by Popina. Still had some doubts about the filling, but end up finding the inspiration here (note: the "Salsa Verde" closed the doors, but Lia keep the adventure in "Lemon & Vanilla").

Ingredients:
1 leek big,sliced (only the white part)
200 gr. crab filling
100 gr. cottage cheese
Olive oil
Salt
6 sheets phyllo pastry



Preparation:
Heat 1 table spoon olive oil in a frying pan, over low heat and fry leek for 2-3 minutes, stirring until soften. Set aside.
In a bowl mix the crab filling with the crumbled cheese.
Stir in the leek, mixing gently.
To work the phyllo do it quicly, keeping the sheets that you are not using covered with a damp towel so they won`t dry out.
Brush one sheet with olive oil and top with other phyllo sheet.
Place the phylo over a rectangular or square baking pan, dropping the lefting edges out the pan on one of it`s sides. Brush with olive oil.
Procede the same way with another 2 sheets of phyllo and lay it over the pan, but this time let the edges drop on the oposite side of the baking pan.
Spead half crab and leek mixture over the phyllo and cover with 2 other sheets.
Repeat until the filling ends (I made just two layers of filling) ending with a filling layer.
Fold the lefting phyllo edges over the filling, covering the burek and brush with olive oil.
Bake in preheat oven at 180º for about 40 minutes, until the phyllo gets golden.

Charlotte de Morango / Strawberry Charlotte



Um doce (pouco doce) para a nossa mesa de Páscoa.

Ingredientes (para um forma de fundo amovível com 16 cm de diâmetro):
250 gr. de creme de pasteleiro aromatizado com citrinos*
200 ml de natas para bater
170 gr. de morango
40 gr. de açúcar
1 col. sopa de vinho do Porto (opcional)
3 folhas de gelatina
Biscoitos de Champagne
Sumo de 2 laranjas


Preparação:
Prepare o creme de pasteleiro substituindo o pau de canela pela raspa (sem a parte branca) de 1 casca de laranja e 1 casca de limão. Reserve. (Bimby: triture as cascas 5 seg./vel.9. Junte todos os ingredientes e programe 8 min/90º/vel. 2).
Prepare os morangos e corte-os em pedaços pequenos. Coloque-os num tachinho com o açúcar e o vinho do Porto e deixe cozinhar em lume brando/médio até os morangos amolecerem. Triture com a varinha mágica, transfira para uma taça e reserve. (Bimby: Coloque os ingredientes no copo e triture 15 seg./vel.7. Programe: 5 min./varoma/vel.1).
Bata as natas frias até ficarem em chantilly. Mantendo a batedeira ligada, acrescente o creme de pasteleiro e bata até dobrar de volume (Bimby: coloque a borboleta no copo e bata as natas 1,30 min./vel.3 e 1/2. Junte o creme de pasteleiro continuando a bater por mais 5 minutos).
Entretanto demolhe as folhas de gelatina em água fria por 5 minutos. Esprema toda a água e reserve.
Ao molho de morango retire 4 colheres de sopa, que irá usar no final, e aqueça o restante. Junte as folhas de gelatina e mexa até derreter. Acrescente parte da mistura de chantilly e creme de pasteleiro e envolva (tal como se estivesse a preparar uma gelatina normal, aquece um liquido para a dissolver e acrescenta a seguir outro liquido frio para a arrefecer e gelatinar). Junte agora esta mistura à que está na batedeira e envolva por uns segundos.
Passe os biscoitos, um a um, pelo sumo de laranja e vá colocado à volta da forma de aro ou fundo amovível (se necessário corte-os à altura da forma). Cubra o fundo da forma com mais biscoitos (se os tiver cortado use as sobras).
Encha a forma com o creme. Espalhe, por cima, o molho de morango que reservou e com um garfo faça movimentos ondulados para criar um efeito marmoreado.
Leve ao frigorífico até gelatinar.
*Quando prepara uma receita de creme de pasteleiro e sobrar congele até 2 meses. Quando precisar de o usar, transfira-o do congelador para o frigorífico e deixe descongelar durante a noite. Aqueça-o ligeiramente e triture com a varinha mágica até obter uma consistência cremosa.

A sweet (not much sweet) to our Easter table.

Ingredients (for a 16 cm dia cake loose base tin):
250 gr. pastry cream  citrus scented*
200 ml heavy cream
170 gr. starwbwrries
40 gr. sugar
1 tbspoon Port Wine (optional)
3 gelatina sheets
Lady Fingers Biscuits
Fresh juice from 2 oranges


Preparation:
Cook the pastry creem substituting the cinnamon stick by the grated zest of 1 orange and 1 lemon peel (without any white cottony pith). Set aside. (Thermomix: grate the citrus peel 5 seconds/speed 9. Add all the ingredientes and cook 8 minutes/90º/speed 2).
Arrange the strawberries and cut in small pieces. Place them in a small pan with the sugar and Port, let it cook in low/médium heat until soften. Blend well and transfer to a bowl. Reserve. (Thermomix: put all the ingredientes in the bowl and grind 15 seconds/speed 7. Cook: 5 minutes/varoma/speed 1).
Whip the cream until firm. Keeping the mixer on, add the pastry cream and mix til double the volume. (Thermomix: place the butterfly and whip 3 minutes/speed 3 and half. Add the pastry cream still whiping for 5 minutes plus).
Meanwhile  soak the gelatina in cold water for 5 minutes. Drain all the water and reserve.
Withdraw 4 table spoons of the starwberry sauce to usen in the end and heat the remaining. Add the gelatin and mix untill melted. Add some of the cream misture and mix (just like you were peparing comercial gelatina, heat a liquid to mel the gelatina and add a cold liquid to cool and gelatinate). Now add this to the cream mixture in the mixer and mix for some seconds.
Soak the cookies, ne by one, in the orange juice and line up, side by side, along the inside of the form tin (if necessary cut them to the same high of the form). Cover the bottom with biscuits (use the ones you cuted if it was the case).
Fill the tin with cream. Spread, on the top, the strawberry sauce previously reserved and with a fork make zig zag movements to make a marble effect.
Refrigerate until firm.

*If you have cream pastry leftovers freeze them up until 2 months. When need it, take from the freezer to the fridge and defrost overnight. Heat it a litle and blend until creamy texture again.

Projecto Marmita Semana 16/2014 - Lunchbox Project Week 16/20114

Esta semana vai ser mais curta, por isso quero aligeirar as marmitas. Aproveitar mais algumas refeições previamente congeladas sempre com saladas ou legumes a acompanhar.

This week will be shorter, so I want to make easier lunchboxes. To take some meals that were previously frozen, allways in the company of salads and vagetables.

Segunda-feira/Monday
Almoço: Sopa de cenoura e feijão verde. Salmão assado com ... cenoura e feijão verde cozidos.


Lunch: Carrot and green been soup. Roasted salmon with ... boiled carrot and green been.

Terça-feira/Tuesday
Almoço: Sopa de cenoura e feijão verde. Hamburguer de tofu no pão com salada de rúcula e alcachofra.


Lunch: Carrot and green been soup. Tofu hamburguer sandwiche with arugula and artichoke salad.

Quarta-feira/Wednesday

Almoço: Sopa de cenoura e feijão verde. Esparguete com carne à bolonhesa, feijão verde e beterraba.
Esta foi uma marmita muito preguiçosa: além da bolonhesa (congelada), tinha o feijão verde já cozido no frigorifico e uma fatia de beterraba que sobrou da salada do jantar de ontem. Uma vez que eram vegetais que podiam ser aquecidos, resolvi juntar tudo na mesma marmita e enriquecer a bolonhesa, em vez de os trazer como acompanhamento à parte.


Lunch: Carrot and green been soup. Spaguetti with Bolognese meat sauce, grean been and beet.

This was a very lazy lunchbox: besides the bolognese (frozen) I had in the freezer green been allready cooked anda a slice of beet, left from yesterday dinner salad. As it were vegetables that coul be heaten, I decided to mix everything in the same lunchbox, instead of carry it on the side.

Almoço: Creme de curgete. Trigo sarraceno com ervilhas, folhas de beterraba salteadas e ovo escalfado.
Adoro ovos escalfados e andava a sonhar com esta refeição desde que congelei o trigo sarraceno e as folhas de beterraba.


Lunch: Crugete creamy soup. Buckwheat with peas, sautéed beet leaves and poached egg.
I love poached eggs and I was dreaming about this meal since the day I frozen the buckeheat and the beet leaves.

Sapateira recheada / Stuffed crab


Foi a primeira vez que fizemos, lá em casa, este pitéu. Medidas a olho e com os ingredientes que a imaginação ditou fizemos chegar a sapateira com o seu recheio. A repetir, mas, para mim, melhor foi o que veio a seguir, feito com as sobras do recheio. Aguardem para ver.

Ingredientes:
1 sapateira cozida
1/2 cebola picada
1 ovo cozido picado
1 colher de café de mostarda
Maionese q.b.
Ketchup q.b.
Cerveja branca q.b.
Whiskey q.b.

Preparação:
Retirar o recheio da sapateira e transferir toda a carne comestível para uma taça.
Lavar a carcaça, secar e reservar.
Misturar no recheio a cebola e o ovo cozido bem picadinhos.
Juntar a mostarda e os restantes ingredientes, aos poucos, provando até estar a gosto.
Encha a carapaça da sapateira com o recheio e sirva.

It was the first time we made this apetizer at home. Measures to eye and using the ingredients dictated by imagination made to the table with this crab and it`s filling. To repeat, yes, but, to me, the best was yet to come, cooked with the filling leftovers. Just wait to see.

Ingredients:
1 cooked crab in it`s carapace
1/2 onion, chopped
1 boil egg, chopped
1 coffee spoon mustard
Mayonnaise, to taste
Ketchup, to taste
White Beer, to taste
Whiskey, to taste
Salt, to taste

Preparation:
Remove the filling from the crab and take all the eatble meat in a bowl.
Wash the carapace, dry and set aside.
Mix the onion and egg, well chopped, in the crab filling.
Add the mustard and remaining ingredients, little bu little, to taste.
Fill the carapace with the mixture and serve.

Wrap de espelta com morangos, tomate e queijo fresco e pesto de rúcula / Spelt wrap with strawberries, tomato, fresh cheese and arugula pesto


Alguns sabores e combinações de sabores e texturas entram nas nossas cozinhas para ficarem. Repetem-se e reinventam-se. Vestem-se de outras formas. Esta salada, por exemplo, chegou para ficar enquanto houverem morangos, mas não se vai ficar pelo prato de salada de acompanhamento. Vai ser também "a" refeição, enriquecida pelo queijo e pelo pesto e embrulhada num estaladiço wrap de espelta.

Some flavours and flavours and textures combinations arrive to our kitchens and stay. We repeat them and reinvent them. They dress up in other forms. This salad, for instance, arrive to stay while there are strawberries, but it won´t be just the salad "on the side". It will also be "the" meal, enriched by the cheese and pesto sauce and wraped in a crunchy spelt wrap.

Ingredientes:
Wrap:
250 gr de farinha de espelta
50 gr. de manteiga
125 ml de água
1 pitada de sal
Recheio:
Rúcula q.b.
3 Morangos
3 Tomates cereja
1 queijo fresco
2 colheres de chá de pesto de rúcula e avelãs (siga esta receita, substituindo o agrião pela rúcula e os cajus por avelãs)

Bimby (fonte: Acção na Cozinha):
No copo da Bimby, coloque a farinha, a manteiga e o sal e programe: 10 seg./vel.7.
Adicione a água e programe 10 seg./vel.7 e de seguida, 1 min./velocidade Espiga.
Transfira a massa para uma tigela e cubra com película aderente. Deixe descansar cerca de 30 minutos no frigorífico.
Separe pedaços de massa e, sobre uma superfície enfarinhada, estenda com um rolo até obter uma camada fina e redonda, ou o tão redonda quanto possível.
Aqueça uma frigideira larga, unte com um pouco de gordura (ou spray Espiga) e quando estiver bem quente coloque a tortilha para fritar: assim que começar a formar bolhas espalme-as com um garfo e volte a tortilha para corar do outro lado.
Dica: divida a massa em pedaços de 50-60 gr., molde cada pedaço em forma de bola, embrulhe cada uma em pelicula aderente e congele. Para descongelar retire do congelador de véspera e deixe na prateleira inferior do frigorifico.

O recheio:
Barre o wrap com o pesto, cubra com rúcula a gosto, os morangos, tomates e  o queijo cortados em fatias.

Wrap:
250 gr spelt flour
50 gr. butter
125 ml water
1 pinch salt
Filling:
Arugula to taste
3 Starwberries
3 Cherry tomatoes
1 fresh cheese
2 tsp arugula and hazelnut pesto follow this recipe, replacing the watercress by arugula and cashew by hazelnuts).

Thermomix (from: Acção na Cozinha):
In the bowl put the flour, butter and salt and mix 10 seconds/speed 7.
Add water and mix again 10 seconds/speed 7 and then set 1 minute/knead dough mode.
Place the dough in another bowl and cover with film. Let it rest for about 30 minutes in the fridge.
Take pieces of dough, form into balls, and, in a floured surface, roll out each ball into thin and round wraps, or as round as possible. 
Heat a frying pan, grease with some oil (or greasing spray Espiga) and when the pan gets hot place the wraps to fry: as soon as start forming bubbles press them dopwn with the back of a fork, flip over the wrap to fry both sides.
Tip: Divide the dough in pieces with 50-60gr. each, form balls with it, wrap, individually, in film and freeze. To defrost take form the freezer and put, overnight,in the lower shelf of the fridge.

The filling:
Spread the wrap with the pesto sauce, top with the arugula and sliced starwberries, tomatos and cheese.

Projecto Marmita Semana 15/2014 / Lunchbox Project Week 15/2014

As opções da semana guiaram-se pelos dias solarengos, apetites e vontades. A semana começou com uma variação desta salada http://decozinhaemcozinha.blogspot.pt/2014/03/salada-de-folhas-verdes-com-morango.html embrulhada num wrap caseiro de espelta e temperada com pesto de rúcula e avelãs desta receita http://decozinhaemcozinha.blogspot.pt/2014/02/creme-de-cherovia-com-pesto-de-agriao.html . A falta de supervisão do congelador apanhou-me desprevenida e sem sopa para terça e dias seguintes, recorri a uma receita simples para um creme de curgete que me acompanhou o resto da semana. Alguns vegetais salteados dividiram-se por duas doses e numa delas foram acompanhados por folhas de beterraba (as folhas tão bonitas de um pequeno molho comprado a meio da semana e que não podia desperdiçar. Salteei as folhas todas e congelei metade).
 
This week options were guided by sunny days, apetites and Wills. The week started with a variation from this salad  wraped in a spelt flour homemade tortilla, seasoned with a arugula and hazelnut pesto (in this recipe substitute the watercress by arugula and cashew by hazelnuts). The lack of supervision of freezer contente caught me out of guard and with no soup for tuesday, so I took a simple récipe to make a zucchini creamy soup that served all the week long. Some sautéed vegetables were divided by two doses and one of them was served with beet leaves also sautéed (the beatifull leaves from beets bought in the middle of the week that I just couldn`t waist. I sautéed all the leaves and freze half of it).

Segunda-feira/Monday
Almoço: Sopa de espinafres. Wrap de rúcula, queijo fresco, morangos, tomate e pesto de rúcula e avelã com salada do mesmo recheio.
 
 
Lunch: Spinach soup. Wrap with arugula, fresh cheese, starwberries, tomato and arugula and hazelnut pesto sauce with salad made from the same filling from wrap.

Terça-feira/Tuesday
Almoço: Creme de curgete. Estufado de lentilhas e couve chinesa com ovo escalfado.


Lunch: Zucchini creamy soup. Lentils and cabagge stew with poached egg.

Quarta-feira/Wednesday
Almoço: Creme de curgete. Salteado de legumes (cenoura, curgete e tomate cereja) com salmão assado e abacate.
 
 
Lunch: Zucchini  creamy soup. Sautée vegetables (carrot, zucchini and cherry tomato) with roasted salmon and avocato.

Quinta-feira/Thursday
Sem marmita.
No lunchbox.

Sexta-feira/Friday
Almoço: Creme de curgete. Legumes e folhas de beterraba salteadas com ovo cozido.

Creme de favas com chouriço / Fava bean and chouriço sausage creamy soup




Todos os anos me encanto com a chegada da Primavera. Mesmo que tímida, como este ano, a natureza opera o seu milagre e é ver as árvores e jardins encherem-se de pequenas folhas e flores. No meu terraço apenas duas aromáticas (a salsa e o tomilho) não resistiram ao Inverno rigoroso, agora é ver a lúcia lima, o estragão, a hortelã e o cebolinho crescerem cheios de vigor. Depois são as novidades dos mercados e os produtos da estação que começam aos poucos a para nas bancas. Não tarda estão aí as favas (já se vêm à venda, bem sei, tal como os morangos desde Janeiro, mas nada como esperar a sua época para tirar todo o beneficio que nos dão) e não vejo o dia de fazer um arroz de favas com entrecosto. Para já fica este creme de favas, de sabor forte e reconfortante para os dias ainda frescos que virão.

Every year I charm myself with the arrive of Spring. Even shy, as this year has been, nature does it´s miracle and we aee trees and gardens filling with  small leaves and flowers. In my terrace just two of my herbs didn`t survive to the severe Winter, but now the verbena, tarragon, mint and chive grow full of strenght. Then comes the market novelties and the season vegetables start to appear, little by little, in the stands. There is no mulch longer for the fava beans to appear (I know, they allready are in the market, such as the strawberries since January, but there is no like waiting for their time to take the advantage from all it`s benefits) and just long for the day I will make a fava bean and pork ribs rice. For now I let you with this creamy soup, with a strong and conforting flavour for the colder days  yet to come.



Ingredientes:
300 gr. de favas sem pele
1 cebola cortada aos cubos
1 dente de alho picado
2 colheres de sopa de azeite
2-3 fatias de chouriço a gosto
Sal q.b.

Preparação:
Tradicional:
Refoque a cebola, as fatias de chouriço e o alho num pouco de azeite por 2-3 minutos.
Adicione as favas e a água a ferver até cobrir os ingredientes.
Deixe cozer e no final triture até obter um creme. Verifique se precisa de sal.
Se o creme  estiver demasiado grosso acrescente água e retifique o tempero.
Bimby:
No copo coloque a cebola, o chouriço, o alho e azeite. Triture 5 seg./Vel.5. Refogue: 5 min./100º/vel.1
Adicione as favas e água a ferver até cobrir os ingredientes.
Coza: 25 min./varoma/vel.1.
No fim triture 1 minuto , progressivamente, nas velocidades 3-5-7. Verifique se precisa de sal.
Se o creme  estiver demasiado grosso acrescente água quente e retifique o tempero.

Ingredients:
300 gr. fava beans, peeled
1 onion, cut in squares
1 clove garlic, chopped
2 tbls olive oil
2-3 cured Portuguese chouriço sausage
Salt to taste

Preparation:
Traditional:
Heat the olive oil in a pan and add the onion, chouriço sausage and garlic and cook in medium heat for 2-3 minutes.
Add the beans and hot water enough to cover the ingredients.
Cook in medium-high heat and in the end purée the mixture until it gets creamy. Taste and add salt if needed.
If the soup it`s too creamy add some water and correct the seasoning.
Thermomix:
In the bowl put the onion, the chouriço sausage, garlic and olive oil. Chop: 5 seconds/speed 5.
Add the beans and hot water enough to cover the ingredients.
Cook: 25 minutes/varoma/speed 1.
Blend 1 minute, progressively, in speed 3-5-7. Taste and add salt if needed.
If the soup it`s too creamy add some hot water and correct the seasoning.

Projecto Marmita Semana 14/2014 / Lunchbox Project Week 14/2014

No fim-de-semana não resisti a uma abóbora manteiga que descansava na janela da cozinha. Forno ligado e lá foi a abóbora a assar, cortada a meio e temperada de sal, alho e alecrim. O seu laranja profundo alegrou os dias cinzentos da semana.
Preparei meia chávena de trigo sarraceno, cozido com ervilhas e temperado com sumo de limão. Foi usado em duas marmitas, em conjunto com as sobras do peru assado Domingo e ainda sobrou parte para congelar.
A meio da semana fiz 4 hamburgueres de tofu, tendo congelado 3.

In the wekkend I didn`t resist to a butternut pumpkin that was laying in my kitchen window. Oven on and there was the pumpkin roasting, cut in halves and seasoned with salt, garlic and rosemary. It`s deep orange took some joy to the lunchboxes during this week grey days.
Prepared half cup of buckwheat, cooked with peas and seasoned with lemon juice. It served two luncboxes along with leftovers from Sunday`s roasted turkey, anda still was some left to freeze.
In the midle of the week made 4 tofu burgers and frozem 3.

Almoço: Sopa de feijão verde. Trigo sararceno com ervilhas, peru assado e abóbora assada.



Lunch: Green been soup. Buckwheat with peas, roastes turkey and roasted pumpkin.

Terça-feira/Tuesday
Almoço: Sopa de feijão verde. Lasanha de legumes (sobras do jantar de Sábado) e salada de rúcula, tomate cereja e morangos.



Lunch: Green been soup. Vegetable lasagna (leftover from Saturday dinner) with arugula, cherry tomatoes and strawberries salad. 

Quarta-feira/Wednesday
Almoço: Creme de beterraba (do congelador). Trigo sarraceno com ervilhas, peru assado, abóbora assada e tomate cereja.



Lunch; Beet creamy soup (from freezer). Buckwheat with peas, roastes turkey, roasted pumpkin and cherry tomatoes.

Quinta-feira/Thursday
Almoço: Creme de cenoura (do congelador). Lulas estufadas (jantar do dia anterior preparado pelo maridinho).



Lunch: Carrot creamy soup (from freezer). Stewed squid (from the day before dinner, made by my dear husband).

Sexta-feira/Friday
Almoço: Creme de beterraba (do congelador). Hamburguer de tofu com puré de abóbora (para usar o que restava da abóbora assada e ainda congelei parte do puré) com salada de alfaces e papaia.



Lunch: Beet cream soup (from freezer). Tofu burger with pumpkin purée (to use what was left from roasted pumpkin, and still freezed some of it) with lettuce and papaya salad.
