Creme de penca com fritos do seu caule / Portuguese cabbage cream with it`s stalk tempura


Este post poderia ser aquele primeiro do ano em que fazemos balanços do ano que passou e tecemos desejos para o que começa. Porém, este ano não o vou fazer. Porque o ano que passou foi um ano de extremos, entre momentos de imensa felicidade e outro de tão profunda tristeza  que torna impossível qualquer balanço, nem tão pouco seria justo fazê-lo. Também não dei por mim  a fazer grandes desejos para o novo ano. Quero apenas viver um dia de cada vez, o melhor que souber e puder, usufruir do meu lar, da companhia do meu D. e investir no nosso projecto de vida. Ter a restante família e amigos e todos os que nos queiram bem por perto e de boa saúde. Quero pequenos grandes momentos: ler um bom livro, ver um filme inesquecível, passear à beira-mar, percorrer os caminhos de um jardim, conhecer mais um bocadinho do nosso pequeno grande país, cozinhar, claro... e de resto...apenas quero tudo a que tenha direito e tão só! E também esse o meu desejo para as pessoas do meu coração e para vocês que vão passando por aqui e ajudando a construir esta cozinha! 

This post could be that first post of the year in which we make a balance of the ending year and make wishes for the one that is starting. However, this year I won´t do it. Because the last year was a year of extreme emotions, between moments of endless hapiness and other of such a profounf sadness, that just makes it impossible for me to do any refections, nor would it be fair to do so. I also didn`t find myself making big wishes for the new year. I just want to live a day at a time, the best I know and can, enjoy my home, my companion D. and invest in our project of life. Having the rest of the family and friends and all who wish us well close by and in good health. I want little big moments: to read a good book, watch an unforgettable movie, walk by the seaside, walk the paths of a garden, learn a little bit more of our great little country cooking, of course ... and the rest ... I just want everything to which I am entitled and just it! That is also my desire to my heart people and to you, who are passing by and helping to build this kitchen!

E agora comecemos o ano com o que de pouco tem havido por aqui: uma receita. Uma receita de uma sopa, cuja vontade nasceu de pois de assistir a um dos episódios do "Chefs Academy". Fiquei a pensar naquela sopa verde e tão portuguesa e como entretanto me deram umas pencas bem frescas aproveitei o que de melhor a natureza nos vai dando para a levar à mesa. 

And now lets begin the year with that little has been around here: a recipe. A recipe for a soup, whose will was born from watching an episode of "Chefs Academy". I was wondering about that as green as though Portuguese soup and as I received some really fresh cabbages I took the best of what nature is giving us to bring to the table.



A receita

Ingredientes:
Sopa:
1 cebola
1 dente de alho,
1 penca
Água q.b.
Azeite q.b.
sal q.b.

Fritos:
Caules mais grossos da penca 
Leite q.b.
Farinha de milho q.b.
1 colher de café de sementes de alcaravia Espiga
Óleo q.b. para fritar

Preparação:
Sopa:
Tradicional:
Arranje a couve, cortando as folhas em tiras e reservando 2 ou 3 dos caules mais grossos.
Pique a cebola e o alho e leve a refogar num fio de azeite, até a cebola estar transparente.
Junta a couve e os talos e tape a panela, deixando a couve suar e perder volume.
Acrescente água quente apenas até quase cobrir a couve e tempere de sal.
Vá verificando os caules que deitou inteiros: não devem cozer de mais, assim que espetar com facilidade a ponta de uma faca retire-os, escorra-os e seque com papel absorvente.
Assim, que a couve estiver cozida, passe-a com a varinha.
Acrescente mais água se estiver muito grossa e retifique o tempero.
Sirva com os fritos. 

Bimby:
Arranje a couve, cortando as folhas em tiras e reservando 2 ou 3 dos caules mais grossos.
No copo coloque a cebola e o alho e pique: 5 seg./vel.5
Junte um fio de azeite e refogue: 100º/5 m/vel. 1.
Na varoma coloque os caules reservados. 
Acrescente a couve no copo e programe 100º/5m/vel. 1.
Acrescente água quente apenas até quase cobrir a couve e tempere de sal.
Coloque a varoma sobre a tampa e programe: varoma/20 min/vel.1.
Vá verificando os caules na varoma: não devem cozer de mais, assim que espetar com facilidade a ponta de uma faca retire-os e seque com papel absorvente.
Findo o tempo triture 1 minuto e 30, progressivamente, nas velocidades 3-5-7-9.
Acrescente mais água se estiver muito grossa e retifique o tempero.
Sirva com os fritos.

Fritos:
Entretanto faça o polme, misturando, numa tigela, igual quantidade de farinha de milho e leite, misture com a vara de arames até fazer bolhas. 
Junte as sementes de alacaravia e misture bem.
O polme não deve ficar muito liquido, se necessário acrescente mais um pouco de farinha.
Aqueça o óleo bem quente numa frigideira.
Corte os talos da couve em pedaços regulares e passe pelo polme. Frite-os, voltando-os para que fiquem dourados por igual.
Coloque-os sobre papel absorvente e reserve.

Ingredients:
Soup:
1 onion
1 clove garlic
1 portuguese cabbage
Water
Olive oil to taste
Salt to taste

Fritters:
Thicker stems of the bunch
Milk
Corn Flour
1 teaspoon caraway seeds
Oil for frying

Preparation:
Soup:
Traditional:
Arrange the cabbage, cutting the leaves into strips and reserving 2 or 3 of the thicker stems.
Chop the onion and garlic and bring to a simmer in a little olive oil until onion is transparent.
Join the cabbage leaves and stalks and cover the pot, leaving the cabbage sweat and lose volume.
Just add hot water to almost cover the cabbage and season with salt.
Check for the stems to lay integers: it should not cook to much, so as you stick ease with the tip of a knife remove them, drain them and pat dry with absorbent paper.
Thus, the cabbage is cooked, turn it into purée.
Add more water if it`s too thick and rectify the seasoning.
Serve with the fried.

Thermomix:
Arrange the cabbage, cutting the leaves into strips and reserving 2 or 3 of the thicker stems.
In the cup add onion and garlic and chop: 5 seg./vel.5
Add a little olive oil and saute: 100 º / 5 m / vel. 1.
In Varoma place the stems reserved.
Add the cabbage to the cup and set: 100 º / 5m/vel. 1.
Just add hot water to almost cover the cabbage and season with salt.
Place Varoma on the lid and set: varoma/20 min/vel.1.
Go verifying the stems in Varoma:  it should not cook to much, so as you stick ease with the tip of a knife remove them  and pat dry with absorbent paper.
As soon as the soup is ready turn itto purée: 1 minute 30 while, progressively, at speeds 3-5-7-9.
Add more water if too thick and rectify the seasoning.
Serve with fried.

Fritters:
Meanwhile make the batter by mixing in a bowl with equal amount of corn flour and milk, mix with wire rod until it bubbles.
Join alacaravia seeds and mix well.
The batter should not be too liquid, if necessary add a little more flour.
Heat the oil in a skillet.
Cut the stalks of cabbage in regular pieces and pass them through the batter. Fry them, turning them so that they are evenly golden.
Place them on paper towels and set aside.
